Is there any need to back off the rear brake linings by inserting a screwdriver through a hole in the disc/drum to move the adjusting star wheel? Does the disc come off easily without having to do this?

It is impossible to give an unambiguous answer whether or not to reduce the pads using an adjusting sprocket, since this may depends on the condition of the pads, discs. If the discs are worn, then yes, you need to reduce the gaskets through the hole with a screwdriver. If the disc is in good condition, then it will not be difficult to remove it.

The caliper piston wind back tool shown looks like it has pins. These tools are usually used for cars with electric parking brakes. I thought the W169/W245 had a conventional piston that just pushed back with no need to rotate it. Please clarify.

This car has a regular piston. The tool is universal, it has pins, but the pins are fitted with a flat attachment that simply presses the piston inward, without twisting.
